    Can I use the Philly brat seasoning to make snack sticks? I know I would have to add cure and I would also add citric acid to the product. If anyone can help me here I would appreciate it.

      Sure could, with the citric acid added you don’t need to hold overnight in the refrig, just straight to the smoker

          No i’ve not, i’ve stuck with Willie’s as my snack stick go to seasoning, but the process remains the same. Cure if you’ll slow smoke, eca for the twang - no hold time with ECA.

            Love the Philly brat seasoning. Just something about that is wonderful. As a snack stick?
            Tend to like snack sticks with a little kick but that is a great idea. Not a fan of ECA myself but give it a try and let us know. Probably some conversion to go from brat to snack stick but it can be done. That might end up very tasty!

              Did A 3 pound batch of the Philly today also A two pound batch of the hatch green chilli. They both turned out good, wrote in my Sausage journal the recipe I used and all other information. Used apple wood for smoke but I believe the smoke flavor is not much of A factor here. If I make them again will add more seasoning mix for both the Philly and the Green Chilli. Like to try new things they are tasty but I think I can improve the end results.

                I have found that when using a brat seasoning to make sticks what works best is using about 20% less meat per seasoning. So for example you would use 20 lbs of meat but enough seasoning for 25 lbs of meat. It helps the flavor come through a little better.
