Meatgistics Podcast: Flatenning the heat wave

Each week, Jon and Austin break out and critique a new beer and different sausage while they discuss everything about meat. Follow along as they talk about their favorite recipes and share some of the best expert tips and tricks for making sausage and jerky. Stay up to date on the latest news and current trends in the meat industry as Jon and Austin explore everything related to meat and more.

    Serious Face

    Beautiful Beverages

Austin has the Batsquatch from Rogue brewing the label and the 6.66% made for a good laugh and a decent beer
Jonathon is drinking MeGose Sandia from Paradox Brewing Company and wow, did it have a TON of different things going on!

    Mystery Meat

This might very well be the last Mystery Meat that we did! Austin ALMOST got it, he even mentioned the correct seasoning but he guessed wrong in the end?

    Meat Matters

    • We talk about a Texas A&M study that is focussing on identifying hot spots for contamination and how you can use that and apply it to your home processing
    • Sonoma Brands, the same company that bought Krave Jerky has purchased Chef’s Cut Jerky.

Do podcasts update to different sites at different times? For instance the current podcast isn’t currently available on Spotify, but I can find it in Google Podcasts.

Isaiah 5:22 Woe to those who are heroes at drinking wine and champions at mixing drinks

I have solved my temp swings in my old Masterbuilt smoker with a PID controller . I now how temp swings of ± 4 deg. on all my racks. Please let me know where I should post pics of the mod I made as I would love to share it with you. Just an FYI it’s not for the faint of heart. Its cost was around $200 and it requires a little knowledge of electricity and some mechanical skills.

@Retired-RailRoader Yeah a good amount of people seem to be going to that, I think I first became aware of them back when we were first trying to use the automotive sponges to increase relative humidity in our smokers but still haven’t gotten my hands on one and played with it.
