    Meatgistics Podcast: Walton's History

    Each week, Jon and Austin break out and critique a new beer and different sausage while they discuss everything about meat. Follow along as they talk about their favorite recipes and share some of the best expert tips and tricks for making sausage and jerky.     Having A Laugh

    Beautiful Beverages

    Jon is once again drinking Dog Fish Head, their Sea Quench Ale
    Austin is drinking High Beam IPA from Walnut River
    Kurt was drinking Axis and Oars, a collaboration between Walnut Valley and Norseman Brewing Company

    Mystery Meat

    Austin got Jon again, he wanted to guess Willie’s but Kurt talked him out of it! We SHOULD be tied 1-1 but we are not, it is still 0-1 Austin in the lead.

    Customer Corner

    We had a question on if snack sticks can be shipped around the country without ice and overnight shipping. There is a combination of pH and Water Activity but without a pH meter and a water activity meter you won’t be able to verify this information and you could get someone sick.

    Meat Matters

    Meat Vending Machines are becoming more popular. We talk about one working very well in Rochester NY and Kurt talks about his customer’s experience with them.
    Campylobacter has become a very common foodborne illness in recent years. There are difficulties with monitoring and preventing the spread of this as it changes quickly, even with that the FSIS is close to releasing some guidelines on this to protect consumers.
    DOJ is looking at a lawsuit against some of the big boys in the industry that might spark some changes.

    Very simple one this week, use a digital thermometer to make sure your food is cooked to a safe temperature.

    Other Notes

    Kurt knows of a fish that will grind well enough to get protein extraction from and we will look at making snack sticks out of it eventually!

      Wow. Sweet podcast. Kurt is a pretty funny dude and a great guest.
      I’m sure Austin was referring to the Presto Pizzazz. Great thing to have. Currently on my second but on it’s last legs.

        PapaSop The Presto Pizzazz is what I have! Absolutely love it. I used to have a couple different styles, but the presto pizzazz is definitely the best.

          Great guest! Nice history lesson on Walton’s growth. Austin try tater tots or hash browns in a waffle maker, Belgium style works better. You gotta love a good IPA.
