So I’m torn on what grinder to get and could use some help. I don’t own a business but I also don’t do little batches either. Usually when I’m making sausage of any kind I’m doing a minimum of 10lbs but typically 25lbs and other times 50lbs. I’ve had a cheap kitchen grinder that I’ve had for a couple years and have never upgraded even though I’m doing significantly more than when I started. My last 50lb batch of Chorizo essentially wore it out. I’m thinking 3/4hp? Too small? Too big? Butcher series or Pro series? And why do I see some 3/4hp grinders on the Walton’s page that are #8 and some are #12? Hopefully this isn’t one of those topics that has been beaten to death because I don’t wanna be that guy:man_facepalming_light_skin_tone: . Thanks everyone.
Njlungbuster hey,first off I’ve been grinding n making sausage for a long time. Started with my dad and his #10 hand grinder when I was about 13 I’m 62 now and this is what I think we use a #12 grinder and do 200-250# of venison a year plus I do 10-25# batches of sausage every couple of months. I’ve done 1000s of # though that grinder over the last 10 years I’ve had it. But I would go with a 22 because you don’t have to cut the meat so small-bigger throat less prep, not that much more money. My 2-cents

You do not need a 22 for what you do. I am a sausage maker for wild game in Colorado. I have used this grinder 8 years. It is not as quick on the second grind but gets the job done. I do more sausage then you do in a day. Take look at it. I like the big pan and the easy of tear down and cleaning.Pro-Cut #12 KG-12-FS Meat Grinder

Only reason why I got it from there was because I had a lot of giftcards to burn and their warranty was always good to me on their line of stuff.
You’re not far from me if you wanna come grind some meats one weekend you’re more then welcome to try it out before making your purchase. I’ll post a picture of it too

You do not need a 22 for what you do. I am a sausage maker for wild game in Colorado. I have used this grinder 8 years. It is not as quick on the second grind but gets the job done. s ByGrizz that model is very reminiscent of the old style Hobart that I ran 40 yrs. ago and the large tray on top is a big help for the speed of the process when you can dump a whole tub of meat and grind then change plates and grind again working in a cold room is so much faster.

Buy the biggest head size you can afford, horsepower is largely irrelevant for home processing unless you want to grind frozen items. A #32 with a big feed pan and good technique will grind 50lbs of sausage in under ten minutes. I personally really like procut grinders for the value commercially, but spending $1500 on a hobby that you’re also going to have to get a special 220v plug wired for isn’t worth it for the majority of people.

sailfaster I agree sailfaster, but I think my grand kids(who help making sausage)will appreciate the better grinder. $600-700 is not the end of the world for something that will last many life times if taken care of. Here’s how I look at it, look at what u can afford n save to buy the next better one!

craigrice For me personally it was a game changer for home processing. I only have a Kitchen Aid grinder attachment to speak of prior. Back in August I took a professional job in the ‘meat industry’ and this little grinder quickly became the shop go-to for small jobs. I really put this thing to work prior to the shop and it performed well. We have since ‘abused’ it and it keeps on ticking. If you are into 10-15 lb batches at home it can’t be heat for the price. I played with a brand new #32 tonight at the shop today and was blown away. More info coming soon!!!

s ByGrizz What you say is absolutely true, we have done comparisons in grinding in the past and a #12 Pro-Cut will usually outperform a #22 Weston. They are awesome machines but they are a little more expensive than the #8 he was talking about but good point! Pro-cuts are designed with commercial places in mind and they stand up to it.

ziek You nailed it, a #12 is a great machine. I have the exact same story. Have had mine for 15 yrs. We grind 10 to 15 deer a year with our hunting party, and 3 0r 4 hogs. Im 65 and find myself with a little extra disposable income now, and I think im going to treat myself to a new grinder. And the winner is a #32. I know I wont be disappointed.
