Oh crap... I forgot cold phosphate!

I’m planning on making some chicken brats in the next day or two using chicken thighs like Jonathon did when he made that one meatgistics video last year. Looking through everything I have at home, I don’t have cold phosphate. Can I just use the carrot fiber with the chicken thighs, seasoning and water, or do I need to put an order in and wait for it? And if I can move on with the chicken breasts just using the carrot fiber, do I still use the same amount recommended in the conversion chart? Thanks.

Njlungbuster You can go ahead without the cold phosphate, it helps but the carrot fiber will help as well. If you are going to use breast then you really do want to use the cold phosphate but Carrot Fiber and chicken thighs should still give you a nice brat!
