@Fat-Bob have you ever tried finishing them in a water bath on the stove at about 175 water temp. I have done this as many others do and I have had very good results and fast finish
craigrice I haven’t…yet.
I do want to try it though. Maybe next time, have 30# of it to eat right now. lol -
Well it may have been cold today, but not to cold to fire up the grill and cook some german sausage and onions.

Trying my second batch of bacon jerky. Using thin bacon this time with my habanero and reaper Pepper powder and granulated garlic. Been in for three hours, hopefully only one more to go!

(the only white meat)@Fat-Bob Came out good with a nice snap. Like last time, I had to finish them off in the oven @200 after 5 hours in the Dehydrator. Thin bacon is definitely the way to go in my opinion. I just received my order with the habanero lime seasoning. That will be the next batch in a week or so…

Jonathon Guess you must have cooked that steak to well done, since you didn’t post a picture of the finished product! I take it yout didn’t have any leftover brisket to put in the chili?

So starts the great bean debate of 2020…raider2119 Of all the things you could go after him for you go after the beans? Why not the ground beef? Everyone knows real chili doesn’t used ground meat. We could also tell him, he should have posted that picture in the soup and stew thread, instead of this one, but is chili really a soup or stew, or something all together different?
As for beans I can go either way.

Tex_77 I’m good with either ground beef or whole muscle chunks in your chili… I also don’t have a problem with using pork in your chili… I’m not a fan of using fowl as a substitute for real meat… just don’t try to pass off that veggie stuff as real chili… AND, while chili gets relegated to one of those soup pots when it’s on the take out buffet of your local grocery store I believe chili should actually have it’s own category…
As for going either way, that’s a discussion for a whole different website…

raider2119 3 different types of beans in fact! Pinto, Kidney and Greta Northen beans, then ground beef, fire-roasted diced tomatoes and whole tomatoes that I then crush with a fork. Half a packet of ranch dressing powder and Excalibur’s Killer Chili Seasoning!
Yes, yes, I know that some people don’t consider it chili fi it has beans, we call those people COMMIES! Flame war on!

raider2119 Chili needs meat and beans! I’m going to ruffle some feathers here but you can also replace the beans with zucchini for a perfectly suitable low-carb chili.
Joe Hell Yes Joe, consider my feathers ruffled… There is only one acceptable replacement for beans… and that is meat!!!
