    Hello all,
My buddy at work brought me in to smoke for him some rabbit w/cheese brats. I’ve never smoked brats and don’t want to ruin them for him. Any suggestions on how I can do it ??

    Thanks, PapaRutz

I smoked some brats last weekend, smoked them for around an hour at 225, then grilled over direct heat. I’d check in on them around 45 minutes and see how they are coming along, if finishing quicker then you thought just move to direct heat, and finish cooking them would be my suggestion.

PapaRutz What Tex_77 says will work for sure, personally I’d just pull them at 45 and get them over some direct heat but that’s just cause I have to be an advocate for food safety!

Jonathon I’ve never got anyone sick yet. What is unsafe about my process?

Not sure about rabbit, but have smoked many pork brats. I do these on a Weber grill. Total cook is indirect. Wood chips on edge of coals. 225 for entire process. These come out tasting nothing like a brat, more like smoked sausage. Very very good!
