Witts was bought out or taken over by Newly Weds Foods, not sure if they would have any info or not. I was talking to a butcher this weekend and he told me their family store used to use witts bratwurst seasoning and that they were bought out. Hope this helps.

Did you smoke these as well? If so what was your schedule? Example 1 hour at x° no smoke then higher temp with smoke for x amount of time etc…? Thanks in advance! Looks great! I sous vide quite a bit but haven’t done summer sausage yet but want to try.
