    I usually use 40 ounces or 1183 milliliters of water in a 25 lb. batch of sausage so the 566.99 number seems mighty low. My number are slightly lower than yours and my sausages stuff fine and mix well at that ratio as well. But with half as much water, I might think it might be a bit of a drier batch and probably pretty sticky.

  • Kitchenaid mixer for 5lb batches of sausage?

    I can do 5 lbs in my 7 qt Kitchen Aid, the motor is a lot stronger than the smaller ones as well. I use the paddle. You need to start and run slow, otherwise you will wear what you are trying to mix and really over mix you meat. Also the colder, the better. The corkscrew is a doughhook and won’t mix well.
