Just made a batch of dill pickle flavor snack sticks with venison/pork (80/20). They are not as firm as I am used to. Soft and a little mealy. Any ideas as to what causes this?

I am Mike from Mid-mo. Just made my first batch of deer sticks last weekend. First time ever using a grinder or stuffer. I used Willie’s seasoning and smoked them with hickory. The family loved them. It was only a 7.5 pound batch (started small in case I screwed it up). I hope to make another batch this week to give as Christmas gifts. I love this site, I’ve learned a lot in a short time
