@Jonathon pheasant, dove, quail, duck…this is great on all of them. Dove even does better with a bacon wrap and a chunk of jalapeno thrown in between.

@erich52 I agree on the Hab BBQ, it is one of the better seasonings for both summer sausage and snack sticks. It has a hint of heta but the sweetness from the BBQ balances that out well!

@erich52 I’ve never seen that happen before but I suppose it is possible. How clumpy are we talking about? As long as it was thoroughly mixed in with the meat I would imagine not as the clumps would break down. Now, if you are saying it created two big lumps and was never distributed through the meat then yes, it might prevent the nitrite from being evenly distributed through the sausage.

@unclebill yes they are hung in a vertical pellet feed smoker for cooking.
