sarabelieves38 what is your plans of a final product. Never heard of anyone using cold phosphate in a ground product.

A milk based binder that includes phosphates for a finished product with even more moisture. -
If I’m not using suregel I include CP in all my products. In the previous life we added sodium phosphate to 99.9 of all the products sausages, hams, hot dogs, breast, and more. The only thing that didn’t have it was no brand name whole turkeys. The brand name whole birds were pumped too.
