    SupplySergeant we make stock, but ussually in smaller batches. Im going to give canning some for long term a shot.

    GWG8541 You won’t regret it! I recommend canning it in pints, rather than quarts. No safety or quality issues with quarts, just most recipes call for two cups at a time.

      cdavis sorry to hear about your Dad. I wish I had some words to help, but there really is nothing that will. Time helps some, but just remember those good times. I was with my dad when he passed last year. I like to think we honor them by the life we live and keeping those traditions alive.

        I just canned 22lbs of venison yesterday and it came out fantastic. I too bought the three piece jiggler weight for my gauged 23qt. The gray truck delivered the jiggler between batch 1 and 2 of the day. I have to say, the weight made all the difference. No more babysitting the canner. Just listen for the “jiggle” from the next room. Of course, it wont work for everyone. I’m below 1000’ sea level so 10lbs works perfect for me. The weight is three piece, every piece = 5psi. The venison came out flakey and delicious. Took all the gamey taste out of the old buck. Free’d up a lot of freezer space too.

          bocephus just lost my dad 3 weeks ago and day before yesterday I passed his hunting knife 🔪 on to my son. He was so proud to have it and promised to pass it on to his children. He’s 12 so he’ll get to carry it for a while.

          cdavis I am very sorry to hear of your loss, this must be a tough season for you, I cannot imagine. I am glad though that your Dad was able to pass on these precious things to your son. He will cherish them for his entire life. I understand though.

                smokinbubba I got the jiggler weight too after recommended by SupplySergeant . I’m waiting to use it on my next project.

                    marzig20 a great introduction to canning meat is to grab cheap chicken thighs sections for 49 cents and make stock. If you can safely can stock you can make anything cuz that stuff is literally the same thing that biologists use to grow bacteria samples!

                      marzig20 I have my Grandmother’s and my Mom’s pressure cookers, haven’t used them and might need some refurbishment if I ever do use them. I could not throw them out, too much history.

                      bocephus you can get new rubber gaskets on Amazon and eBay. I use my parents. Just bought a new gasket and good to go.
