    I am making some venison snack sticks but plan to not add any ECA. I seem to recall that you need to let sit in refrigerator for 12 hr. after stuffing and before smoking. Is that correct or was it 24 hr?

      keend0 That is correct. However if you add this you could smoke right away.

        What Cabelas90 said. I use smoked meat stabilizer in a lot of the stuff I do because I don’t care for the tang of ECA. The Smoked Meat Stabilizer doesn’t impart any flavor.

            keend0 I dont know if I’m nuts, but I like to let mine sit overnight, to me it seems to even out the flavor. I also do not like the tang of ECA.
