      mitch0700 I wouldn’t use carrot fiber in pepperoni. Carrot fiber is going to hold to much water/moisture for that style of sausage. It is typically used in fresh style sausages to help make a juicy sausage. Sure gel would be a better choice and while I am not sure off the top of my head I think it is a powdered milk product or has some in it. There are some other choices if allergies are a concern. Because it is a cured sausage you will want to get good protein extraction and sure gel will help with that process.

        YooperDog , thank you! I think I’ll try the milk powder, I have that on hand. I’ve used it with bratwurst and they came out great.

          mitch0700 Yes, Sure Gel is a powdered milk product with some phosphate
