Has anyone made tamales with smoked brisket? Becoming very popular in Texas, especially Austin. I haven’t tasted them yet, but want to make some. They must be good because they sell for almost twice of a regular tamales.

Chef No never made. But, the steaming of the tamales would definitely bring back the juiciness of the brisket. The options/combinations are endless. RE: The new option to a taco .

Man the price of regular tamales is already high, I couldn’t even imagine paying almost twice that for brisket tamales.

Chef I will have to do some brisket and give the meat to some Mexican friends to make tamales. This has me very interested. I’m gonna text them right now

Yes I have made tamales with smoked brisket. I find it much easier to stuff the tamales if you grind your brisket after it has cooled when done smoking. The steaming of the tamales actually brings back the moisture to the brisket. I use a medium grind, and this was just an experiment at first as the sliced/chopped brisket was really hard to work with when stuffing the tamales.

Brisket tamales are wonderful. mhighland69 - Never thought to grind before rolling the tamales. I will try that next time. Also work great with leftover pulled pork unless its got some really sweat rub or sauce.

@bmartin1000 Something else to try, I have done it with smoked pulled pork, as well as ground smoked brisket is I make egg rolls with both. I make some homemade coleslaw, put whatever meat I’m using(pulled pork, or the ground brisket) put your meat that you are using in a wonton wrapper, add some of the coleslaw, roll into an egg roll, deep fry, and I like to serve with ground whole grain mustard. ALWAYS BEEN A CROWD PLEASER.
