    Made Snack sticks today with venison and I use pork fat smoked until 165 came out a little too mushy not for sure where I went wrong this is my first time making them any suggestions what I should do I went 50-50 ratio

        Made Snack sticks today with venison and I use pork fat smoked until 165 came out a little too mushy not for sure where I went wrong this is my first time making them any suggestions what I should do I went 50-50 ratio

        wess if you used strictly fat and not pork that is where it may have gone wrong. In my opinion if you use strictly pork fat and not untrimmed pork meat use no more than 25% of your meat block.
