      Parksider I’d also recommend some sauteed peppers and onions! I was thinking about making a philly cheese style pizza tonight

        twilliams Either way would work…if going fresh I’d recommend sauteing first to remove some of the excess moisture and to guarantee it will cook through. Dried vegetables would certainly work too.

            twilliams You might a similar number to what you would add for the high temp cheese. 1-1.5 lbs of fresh ingredients to a 12.5 lb batch should be plenty…same for saurkraut in the Reuben, making sure to squeeze excess liquid and saute. If going the dried route I’d use 1/4 of that amount.

              twilliams You have 3 good ones there! If you like a sweet brat sometimes that Apple one that Brianh was talking about is seriously good! Supreme Pizza is another great one. I feel like Bratwurst have the best overall seasonings. Like maybe not the #1 seasoning but that is probably the category with the most great choices.

                Jonathon so after grinding all the hog i ended up with 61 pounds. I think i will get enough pork fat to go up to 75 to even the batches out. With that being said splitting up the batches into 12.5lbs i get to pick out 6 different flavors. Let the fun begin

                  Please post a review on your flavor tests with 6 different batches on Brats, I have also been doing 12.5 lb batches on my snack sticks because it is 1/2 package of seasoning and 1 full stuffer tube. Brats are on my list for next week.

                    akdave will do. So many to choose from. At this moment i am thinking, Reuban, Philly cheese steak, Hatch green chili, blue ribbon, jambalaya and was suggested apple but not so sure on that one. Interested in the feta and spinach.

                      twilliams Okay here goes with links for anyone interested to all seasonings including the ones you have. This completed my perfect morning of meatgistics, so thanks for this! Also, congrats on the Power-User status!
                      Philly Brat All around awesome Bratwurst, is the favorite of numerous Walton’s employees
                      Reuben Brat Great brat if you like Ruebens, add cheese and/or Saur Kraut (@joehell recommends same ratio, 1 lb to 10 lb of meat)
                      Hatch Green CHili Great new flavor brat little spicy and tons of flavor
                      Blue Ribbon Our best selling bratwurst
                      Jambalaya Brat Very tasty, lots going on, I recommend you follow the usage as closely as possible, adding chunked already cured and cooked ham is fine. Chicken broth with rice also adds a lot. This is one of the coolest brats to make

                      So that is the 5 you are planning on doing I like all of those choices and think you’ll be very pleased with all of them. If I was to replace 1 of those with something below it would be the Blue Ribbon but ONLY because I have had that 500 times. If you have never tried it then I would recommend you make it, it is our best selling bratwurst seasoning for a good reason!

                      Feta and Spinach I don’t like feta (dated a greek girl in college and it was on every single meal) or spinach but I do like this seasoning. I think it works better with poultry than pork or beef though
                      Apple Brat Great sweet brat but sounds like it might not be what you are looking for. If you do make it, add cheddar cheese!
                      Salsa Brat Really good brat, add some cilantro for added taste if you like that flavor, makes it even better
                      Jerry’s Brat really great overall brat. Similar to common brats you can buy at the store
                      Habanero Mango Really really good but also one that I have probably eaten too much of and not one that you’d want to sit down and eat 4 of.
                      Hot Buffalo Wing Brat Really good and it’s cool to cut up into small bits and dunk in blue cheese or ranch
                      Tomato Basil Really nice brat with a fairly strong sun-dried tomato taste

                      And for what I think you should use:
                      Supreme Pizza Bratwurst I love this seasoning, our video editor patrick has eaten all of the ones I made because he is a lazy bum and doesn’t want to make his OWN LUNCHES! Add mozz and cheddar, or even better all 4 cheeses for an extra level of awesome!

                      Enjoy and it would be really cool if you did what akdave suggested and post your thoughts on all of the ones you make!

These are from a local processor that has been in business for years, which used to be good and is now losing his touch or just simply dont care anymore. Brats of inconsistent size, meat squeezing out of the end, ( which may be from vacuum packing so i get that) but also all around quality and lack of flavor. I guess like the saying goes, if you want it done right, you gotta do it yourself.
