Making snack sticks

I was wondering if I mix everything but encapsulated citric acid and the cheese and put in fridge overnight will the encapsulated citric acid still make the sticks tangy if added with the cheese next morning
daves yup, as long as the temp gets above 130 for an hour that will work!
