You may want to check out BBQ Brethren and ask some questions over there. That forum is pretty active and there are a lot of Cookshack owners there that may be able to help. I know some of them who owned early models swapped out controllers and reported much better results. I don’t follow the Cookshacks too closely but, it seems like the early ones had erratic controllers and the fix was $100~$200 for the various new controllers people used. Between commercial guys, caterers, and serious hobbyists, I bet someone over there can help you get your smoker running better without babysitting.
