Making a 5lb batch of summer sausage with Unit 107. Unable to find it in the list of conversion for per pound and per 5 lb. Any help?
Hosshess By my calculation you should use 4.5 ounces for 5 lbs.
Also calls for 1-1/4 tsp sure cure for 5 lbs -

https://meatgistics.waltonsinc.com/topic/762/cured-sausage-107-basics-for-making-summer-sausageThey made 25lbs on video using 1 bag of seasoning. You’re making 5 lbs, so use 1/5 only of everything they mention. Hope that is what you were looking for?

Dave in AZ Careful, I believe 107 in the link refers to the number designation for the video itself.
They are using H Summer Sausage Seasoning not 107
I could only find “Unit 107” in a 5.625 lb. package for 100 pounds, if Unit 107 is indeed the seasoning Hosshess has the math works out to 4.5oz for 5 lb.The 107 designation for both the video and an actual seasoning is confusing

I came up with 3.75 tsp for the Sure Cure with .25 tsp/pound as the calculation. Sound right?
Hosshess According to the conversion chart for cures 5 lb. should have 1-1/4 tsp of sure cure
.25 tsp. per lb. x 5 lb. = 1.25 -

Hosshess Cure 1 is 1/4tsp/1g per 1 lb of meat for 5lbs that would be 1 1/4 tsp or 5 g.

.25 tsp. per lb. x 5 lb. = 1.25glen thx glen and everyone I failed to mention the full detail: I’m using a premix pack for 10 of the 15 lb meat block. Needed the 5 lb conversion for the 5 lb differential but the sure cure and sure gel are all based on the total meat block. Thanks for weighing in!
