Walton's High Temp Cheese Freeze?

QUESTION< how long does the Walton’s High Temp cheeses hold in the fridge before it needs to be frozen?? I got 20 pounds in the fridge and I’m a bit away from using it yet. Vac seal and freeze??

@DennyO I know regular cheese freezes very well. I would think high temp would as well. You might want to pre-freeze it prior to vacuum sealing. Might keep it from clumping up later.

processhead Right on, but how long can it set in the fridge before spoil? Like any other cheese?

I’ve never ever used Hight Temp cheese before. Always normal cheese.

An unopened bag should be good for at least 3-4 weeks.

Tossed them in the freezer for now. I’ll reweigh for the future and separate for vacuuming tomorrow.

Always freeze mine last long long time.

Yes, freeze first before vacuum sealing otherwise you will end up with clumps of cheese especially with the cheddar. Defrost slowly or use it frozen when putting it into your sausage.

I’ve held in the bag it comes in for a few months in fridge without issue. I have a crisper drawer in my garage fridge where I keep that and casings. When I do freeze I often just just use a ziploc freezer bag vs vac sealing. No issues there either. Easily breaks up even when frozen.

Thanks Chefs! I put them in the freezer yesterday an transferred them to the garage freezer today without vacing. This is the first year that I have not done my deer summer sausage in January!!
