I have a crisper drawer in my garage fridge where I keep that and casings. When I do freeze I often just just use a ziploc freezer bag vs vac sealing. No issues there either. Easily breaks up even when frozen.</p>

Defrost slowly or use it frozen when putting it into your sausage.</p>

I would think high temp would as well. You might want to pre-freeze it prior to vacuum sealing. Might keep it from clumping up later.</p>
