    Chefs, has anyone tried to pipe in a power humidifier mod like adding a smoke pistol to add humidity for smoking cured meats? Just a curious mind here chefs.

    If so what and how did the mod work? Pics please.

      I have suggested it several times, but it seems to fall on deaf ears. I personally do not need to add humidity to my cook, but have thought about it just to prove the point for those on here that ask how, but are not willing to experiment. I use this for my drying chamber and it rocks, so I know it would do wonderfully in that environment.

        I have gave a lot of thought about this also and plan on trying it. I’ve looked into the reptile foggers and like that you can adjust the amount of humidity.

          I started to look into this about 3-4 years ago. My thought train was, if you can add humidity to your house, why not your smoker. There was some talk about water pans, wicks, sponges and a few others. No luck. Since I’m using LP to fire my smoker this was already an issue.

          Then, along came the Sous Vide for finishing smoked products and haven’t looked back. I still fill the water pan after the initial drying process and add smoke until it hits roughly 140. Then SV all the way.

            Yeah, we looked at it when I discovered the evaporation from the pans wasn’t what we were expecting. Then we found the sponges/towels thing and it fell off in importance and things just kept on getting in the way. Most of what is done nowadays seem to be mods but if we ever get back to being able to do trial and error things we are considering something in that vein.

              mrobisr Just a question here, When you are using a drying chamber, aren’t you removing water from the protein? Why would you add moister then? Now understand I’m not into dehydration and jerky, I leave that to my hunting partner. Chef, I’m just trying to get my head wrapped around this thinking.

                @DennyO I was talking about a smoker, not a drying chamber, sorry! But, in a drying chamber you still do need to be able to add humidity. That is the issue we have with ours here from time to time. We have hard water which can clog up the lines.

                But, in general, yeah, I was talking about a PK100 style smoker cause…you know…I’m an idiot.

                  Yes, you are trying to remove moisture from the protein in a drying chamber. But it is important that the drying happens at a controlled rate. That is where the added humidity comes in, (one of the reasons, anyway).

                  Even with added humidity to the drying cabinet, it is still dryer than the inside of the product, so the rate of moisture loss in the product becomes slower. Helps avoid case hardening of the product as well as promoting the growth of the good bugs in some products.

                    @dennyo You also lose humidity when the fridge kicks on to keep the temp at 55f, so in my case when the fridge turns on the humidifier also turns on to maintain approximately 85%.

                      The one I have will go from the lowest setting of hardly being able to see it to the highest setting that produces a thick fog.
