    marzig20 I have to agree with ND Mike ; if your going to play the Switzerland card; Team GRAY (American lang. spelling) or Team GREY (British Spelling ) is the way to go.

                    ND Mike I have a new thermostat and probe coming that can be set to either heat or cool. It has a temp range between -40 to 240 degrees. I’ll mount the probe inside smoker and then plug duct fan into thermostat.

                    I’m hoping on the cool setting, I can set a temp for the duct fan to come on. So if the smoker thermostat is set at say 140 and the duct fan thermostat is at 140 it will come on and greatly reduce temp swings.

                    It was about $30, the duct fan was $25, and smoke tube was $10. All in for $65 with no permanent mods to smoker. This might work on any electric smoker. I’ll let you know the results after testing if you’re interested.

                            Well I jumped in and started asking questions immediately before finding this area. I want to thank those of you that already have answered questions! Sorry, I don’t know how to add your names to this post.

                            I’m from Silvis IL.

                            I was a retail meat cutter for Eagle Foods for thirty years. After they closed, I started working for Rock River Arms as a custom 1911 pistol smith for seventeen years and retired last year.

                            I’ve been smoking sausage on and off for the last twenty five years. I also smoke briskets and make Canadian bacon.

                            My current smoker is a small SmokinTex that I’ve modified to maintain consistent low temps while still producing smoke.

Currently using an ALFA wood fired oven, MAK pellet and Hunsaker drum. Just ordered the PK100 yesterday. I am really looking forward to diving deeper into processing tasty proteins. Dang glad I found this group!!
