    cdavis It’s always better when you use your own sausages and all of the veggies directly from a local farm. Using fresh oregano, basil, garlic, rosemary and Madiera wine instead of chicken stock to make the sauce also added a new taste. The place still has THAT smell in the air from the previous day. Yep, a little piece of heaven. Trying to keep up with you guys who also create some awesome stuff.

        My wife bought me a oklahoma joe offset smoker and I just managed to adapt a rotisery for it.Gave it a test run last night

        RON PARRISH I have been eye balling one for my weber gasser, I know it won’t have that smoke flavor without getting smoking tube. But man the rotisserie chickens from the stores are so dang good.

          zbigjeff I understand, I have two nieces that are vegetarians, we try to accommodate them in every way we can without being critical.

            bocephus At times, I also have to review a “no go” chart for some family members who have different allergies than the norm. Just makes preparation a bit more challenging. After they figured out that I can/could create under the restrictions, they figured out I could make their food a bunch more tasty than the basic cardboard they were eating. 🙂

              bocephus I decided if I became vegetarian, I would by far be the most unhealthiest one ever on the face of this earth!

                HerbcoFood There have been 3 in the family that have paid attention to being a vegetarian. But, were unhealthy (aka: about 30-40 lbs overweight) because of their food mix. Obviously, didn’t realize that there are some vegetarian selections that will put on the lbs. I just shook my head. When I delivered “very vegetarian” sides/main courses to gatherings, they tasted them and swore that I didn’t follow the “rules”. Then, just to show them, I took out my list of ingredients and pictures along the way for show and tell. Yep, I can be just as big a butthead as them. I retained the electronic copy of the recipe and gave them the paper. Then, I went and ate the mixed items on the table and grabbed a good bourbon. 🙂

                      bocephus Way to go. My other seasoning that made them lose their minds was porcini dust (ground up dried porcinis). Then, I used it right if front of their eyes and it blew them away. But, you have to let it steep for awhile to get that meaty taste just right. Like you found out, mushrooms are versatile.

                        bocephus A while back we have made a mushroom& spinach enchiladas with a little shredded smoked swiss inside and then used smoke cheddar on the top. Served with sliced black olives, scallions, sour cream. fresh pico and shredded smoked cheddar. Came out awesome.

                                    HerbcoFood Recently bought a smoking tube. They are WOW for pounding in extra smoke on non-smoker units or for cold smoking.

                                      Well just trying sweet maple bacon sticks, used 3lb meat 2lb bacon and cheese, on smoker now. I’m new to all this and it’s very fun, this is my 3rd batch of sticks and everyone can’t believe I make them,
