    How long does everyone think a summer sausage’s shelf life is in the fridge (uncut)?

      Assuming it was processed properly from quality ingredients, I would say a couple of months and it would still be somewhat edible.

      The thing is, processed meat doesn’t just become inedible over night. The deterioration is gradual. Over time, flavors fade, color fades, as the cooked emulsion breaks down moisture and binders pools up in the packaging, the fats start to turn rancid and at some point spoilage pathogens get a foothold and start growing.

        JLane I wouldn’t go past a week of consumption, but I don’t use ECA either. But even with the use of that it would be thrown out after a week and a half unthawed in the fridge

            twilliams Does ECA extend fridge life? Also, if it was vacuum packed and unopened in the fridge, would you still say a week? I’ve never had any last that long, since I package in half pound package when I vacuum pack.

              GWG8541 Just opened a vac packed summer sausage without ECA stored in the fridge about 4 months.
              It was better than when I put it in
              Was made with sure cure, and I do tightly vac pack

                glen Thanks, I know there are many variables that come to play when spoilage is concerned, but I know Sure cure plays a big part in shelf or fridge life. Thanks again for the response.

                  Mine lasts a long time. It’s cured, smoked and semi-dried, and I use ECA. We also keep our fridge a little colder than normal, and that also makes a difference.

                    I have had some in the fridge so long it is dry and hard to cut but still tastes good also for storage I vacuum seal with a cabelas foodsaver for over 2 yrs
