It’s cured, smoked and semi-dried, and I use ECA.  We also keep our fridge a little colder than normal, and that also makes a difference.</p>

It was better than when I put it in<br />
Was made with sure cure,  and I do tightly vac pack</p>

Also, if it was vacuum packed and unopened in the fridge, would you still say a week? I’ve never had any last that long, since I package in half pound package when I vacuum pack.</p>

But even with the use of that it would be thrown out after a week and a half unthawed in the fridge</p>

<p dir="auto">The thing is, processed meat doesn’t  just become inedible over night. The deterioration is gradual. Over time, flavors fade, color fades, as the cooked  emulsion breaks down moisture and binders pools up in the packaging, the fats start to turn rancid and at some point spoilage pathogens get a foothold and start growing.</p>
