    Has anyone here made dried venison? There was a butcher shop that we used to take the rear quarters to and have them make dried venison. It was great for sandwiches! It wasn’t super salty either like dried beef tends to be. If any has and would like to share a recipe that would be great!

      I have made a lot of venison pastrami, which is really just a variation of what you are describing. Pastrami is cured and smoked whole meat or chunks, seasoned with lots of garlic, black pepper and other seasonings.
      Leave out the seasonings and you would have dried, cured venison.

        ND Mike I put a recipe in a thread called chipped deer. It’s how I do my dried venison bundles. I dont know how to copy a link to this post, but If your search chipped deer you will find it.

          Another option. Just delete the black pepper.

                    I like venison pastrami and I make it every year, I just cant find my recipe that I use at this moment.
