processhead do you use a hot plate to heat them or what do you use for heat. I can get one of these fridges for free. I’ve always wanted to build one. My Dad had one years ago but all he used it for was cold smoking. I want the ability to do summer sausage and sticks.

I have used single burner electric elements like the one carried by TSM. You can also just purchase an 1100 watt hot plate and remove the element or bypass the internal thermostat.
I wire the heating element to an external thermostat or PID controller to regulate the temperature.

What type of PID do you use? If I do this I may need to contact you…lol!

I have used surplus Watlow and Yokogawa controllers, but most will work OK. Inkbird and Auberins make PIDs that will work for smokers too.
Let me know if you have questions when you get ready to pull the trigger. -
I use an kinbird itc310 in my masterbuilt30. Cost 25 bucks on offer up. Has 12 programable heating/cooling steps and alarms for high and low. Took some trial and error to get the thermometer in the right place so the temp swing were minimal. Now holds 175 +/- 3 degrees.

samspade just want to make sure I understand. You use the ink bird setup to control the temp/operation of your MB? Are you bypassing the built-in temp controller or are you using it as a switch to turn the MB on and off?
-
No. Kinda convoluted but here goes mb draws up to 15 amps and the inkbird 310 can only do 10. So I built a box with a 20 amp relay and a straight thru 120 outlet. The box plugs into the power the mb plugs into the relay cord and the inkbird plugs into the box 120 outlet. I turn the mb all the way up and place the inkbird thermometer near the mb heating element. Took a while to find the best place for the thermometer. I can start at 120 for say 1.5 hours have the inkbird increase the temp to 230 for 3 hours then increase to150 etc it can handle 12 different steps with 12 diff times. Alarms for over and under temp on each set. Never open the box cause I built a smoke box and mounted it to the side.
I think that’s it? -

I think that’s it?I am assuming you are using an analog smoker?

Yes. Just got started and this seemed like a starting point. Kinda close neighbors so I try to keep the smoke down
