Thinking of doing some snack sticks with some wild leeks or ramps(depending on where you live). Plan on using a milder stick mix to bring out the flavor of the leeks, along some ht cheddar. My question is, should I dehydrate the leeks and grind them up or just grind them raw? Anyone out there try this before?

Gravity Storm I would probably say dehydrated for a cured sausage. Fresh sausage raw would be fine.

Gravity Storm I would prep, clean, dry and sauté the leeks. They can be a bit ‘fiberous’ if used raw. I just sautéed a bunch in bacon fat today for a new fresh brat sausage this weekend. I haven’t decided on the other components quite yet. I used to make a Greek loukaniko for a local restaurant that was always delivered sautéed. I’d still be making them if they would have been more reasonable to work with. Lol
