Trust me I’m not a newbie to sausage, just new to naturals. (oops, sorry I didn’t mean to leave it like that, LOL.)No matter how good you are an occasional blowout will happen. I’m a firm believer of prepping my casing way before stuffing time. I soak my casing in water with just a little bit of white vinegar. I soak them for an hour or 2 and change the solution and then soak for another hour then stuff or put in the fridge until the next day. Sheep casings are more tedious to use as they are thinner and more prone to blowouts. Plus the smaller size makes it that much difficult to load onto the stuffing tube (tubed casings help eliminate that problem). Hog casings are larger and thicker then sheep casings so they are more forgiving.
@DennyO John Belvedere has it pretty solid. Sheep casings are a bit more tender and can blow out easier than others. Proper casin prep is important, not over stuffing especially sheep casings, using the right size stuffing tube and loading the casings on properly. After a little practice you will have the hang of it.

I rarely use anything but natural casings, with the exception of summer sausage. As John Belvedere stated, give plenty of prep soak time before you use them. That has been the key for me. When making a large batch, I’ll rinse them and leave to soak overnight in the refrigerator. They’ve been fine when the work starts in the morning. Without at least a 2 hour soak, they tend to be more prone to blowouts. Start stuffing slowly, and you’ll get the hang of how fast you can go. Good luck, and I’m sure you’ll do fine.

Here here. Exactly right rinse inside and out. They are surprisingly tough after the soak. -

I hope you can share the source of those short length casing with the rest of us so no one else spends their money there.

I’m so fed up with political, company and personal belief bashing that the net seems to have nurtured so well. I also do not want to bring any of that negativity here. I was brought up with the saying if you have nothing nice to say, don’t say it. I’m sure we all can agree that anything we have purchased from Walton’s exceeded our expectations. With that said I just bought their tubed sheep casings and I’m sure I’ll be very happy with them.

What is the difference between the sheep and the hog casings?
I seem to remember the first is the diameter and the second was the ease to stuff?

Those are the two key differences. Sheep casings also have a thinner wall thickness than hog casings.
I find that sheep casings are harder to put on a stuffer funnel tube if they are not sleeved. The thinness of sheep casing requires more dexterity to get them started on the tube.
