    I just got the Willies snack stick seasoning I’ve seen all the conversion charts I plan on doing 5 lbs of beef but what I don’t see is if I add any water while mixing?

      I’ll use around 8oz per pound depending on any extra additives.

        Water added to cooked sausages is not a real exact science and I am not sure there is one right answer.

        You do want to add water to aid with mixing spices/cure with the meat block and to adjust the viscosity of the mix when you are trying to stuff small diameter product like snack sticks.
        With cooked products, you will always lose some of the water you added during cooking due to evaporation.

          shappartj i myself would use 12oz for a 5lb batch. Some would go 9oz. Mixed with your sure cure in with it. Maybe start with 9 oz and see how it feels, if its still a bit stiff add more
