Some would go 9oz. Mixed with your sure cure in with it. Maybe start with 9 oz and see how it feels, if its still a bit stiff add more</p>

<p dir="auto">You do want to add water to aid with mixing spices/cure with the meat block and to adjust the viscosity of the mix when you are trying to stuff small diameter product like snack sticks.<br />
With cooked products, you will always lose some of the water you added during cooking due to evaporation.</p>

I’ll use around 8oz per pound depending on any extra additives.</p>
