    We also put up greenbeans and some strawberry fig jam. Got enough butternut squash to make everyone tired of it . Also froze enough tomatoes to get us through.

      TexLaw here’s the pictures of the eggs I put up yesterday, only thing I changed is I did add a bit of beet juice, wife thought the color was pretty.

      Chef The gojuchang puts a little color on the eggs, sort of a pale yellow/orange. I look forward to seeing how the beet juice works out!

        TexLaw Between the turmeric and the gojuchang, they are taking on the pale yellow/orange color. I believe I didn’t add near enough beet just to alter the color nor taste.

          calldoctoday I think most people in this community will do okay regardless of the situation. There is so much knowledge and experience with the people who are part of meatgistics. We’ll survive anything, even Armageddon.

          Chef Well, I stopped at two places on the way back from an inspection today just to see if all that was affecting us too. Well, apparently it is. Both places were completely & totally wiped out of canning goods & usually they look like no one ever wants anything to do with it, amazing. I talked to one of the guys at one place & he said he has been filling the shelves with canning goods every morning & they are wiped out by early morning, he has never seen anything like it before. I just did not imagine that many folks were into it like that. I just hope it does not turn out to be a lot of wasted effort & food somehow. I will be on assignment in North Carolina most of the rest of the week.

            calldoctoday It’s not just canning supplies. Manual grinders are hard to get (at least a #32), well pumps, solar panels, pressure cookers… I think people are really concern about the future more than ever. I’m most certainly not a survivalist, but I know that I can exist for awhile. Depending on a few things in the future, I do have a list of things I will stock up on. Would be interesting for people in our community to suggest things we should have, just in case… Would love to see other’s thoughts.

              Wow, It is a good thing a lot of us here already have a good supply of a lot of those things. I wonder about pressure canner & grinder parts though, now that you mention some of this. We can hang around for quite a while & have been even more fiercely independent in the past than we are now & we are still pretty fierce. Well, I may have to go back to hunting & fishing on the property & still freezing drying, preserving, & canning. I am curious as to a lot of other folks thoughts too, not so much the normal day to day stuff, but really getting serious.

                Chef have you ever canned meat in jars ? I do it the way my grandmother did it with a water bath canner and if done properly it will give you the most tender meat i.e. stroganoff or can be used in many ways .

                    craigrice do it all the time. Chicken breast, beef stew, roast beef, turkey, all in different forms, soups, just the meats, really never had a problem. Now I do meats at 15 Pounds for 75 minutes, but have kept them for years as an experiment. When ever meats go on sale, especially wholesale, I’ll can a case. Makes meal preparation very easy

                      People around me only stock up when they think danger is imminent. We have a months worth of food without trying. Hurrican on the way I just buy extra diapers and beer. I got some funny comments last year when I had a case of diapers and 2 cases of beer and nothing else.

                        calldoctoday I’m building a large dehydrator. Again, not trying to be paranoid, but just prepared. And I enjoy all these skill with foods. Very blessed to have a little land and storage to just have fun.

                              Chef Well those are the two things its hard to find substitutions for. I can make beer but thats a couple weeks at best. Cloth diapers would signify the end of the world as far as I’m concerned.

                                    craigrice Got to agree. Must have coffee. Have my drip pot and I keep several pounds of coffee on hand. Water, got a well with very good water. I’m looking into one of those manuel pumps that still can operate as an electric pump.

                                          Well, we could go back to eating poke salad like when we were kids & sassafras root tea. Then I have also tried Yucca, but I have heard since then that was not too smart. Also, Greenbrier & some other things that are rampant are edible if it comes down to it. Then we can get to them tree rats, etc. Tree Rat stew is delicious.
