    Hey Guys this is Jon from Meatgistics! It’s Memorial Day weekend and that means it’s a good time to take a moment and appreciate the brave US Service men and woman who have given their lives to protect the American way of life. The courage and bravery of the US soldier is the backbone of this country without which we would not have the freedoms and rights that we do today. There are many great ways to show your support for our troops at this time of the year. Wounded Warriors who work with injured and disabled vets or Homes for our Troops who help build specially modified homes for wounded soldiers are both organizations that do great work with those who have been injured in the line of duty. Whatever you do this time of year I urge you to donate time or money to an organization like this. They help provide our veterans with the care and support they need and show them the admiration that they deserve! The charity that we work with is All American Beef Battalion. They are a group of volunteers that are involved in the Beef & Cattle industry who host both send-off and welcome home cookouts for servicemen and women and their families as they are leaving for and returning home from deployments. The cookouts include a steak dinner and entertainment, at a recent event where they fed 4,500 troops two days in a row, Gary Sinise and his Lt. Dan Band showed up to support the troops! You might have seen Steaks for Troops Seasoning on our website, we have partnered with All American Beef Battalion to custom blend their Superior Steak Seasoning which is used for the Steaks For Troops. It is available here and a portion of the proceeds are donated to All American Beef Battalion so that they can keep up the good work sending off and welcoming home our troops. Read the article, and then post your questions or comments below. What is in Jon’s Pantry? Hey Guys, today we are going to start a new segment where we take a peak into the pantries of Walton’s employees and to kick it off we will take a look at what I have in mine. I have a bunch of different seasonings and I will go over what I like to do with each one, some of my favorite uses are pretty far off from what they are intended for! Salt & Vinegar Wing Shake from Excalibur. It is a great mix that will be a favorite of anyone who likes salt and vinegar potato chips. How is it on chicken wings? I have no idea, I have never used it for that purpose! What I like to use it on is peeled and cut up cucumbers! It is an amazing healthy tasty treat that turns the generally boring cucumber into something my wife and I fight over who gets the last one! Yeah, she usually wins. Bloody Mary Wing Shake I like to put this on pasta if the red sauce isn’t quite as spicy as I like it, Pizza if I am doing a frozen one or if it is cold out of the fridge and I love to put it on chicken breast and then put it on the grill. So that is sort of close to its intended use. California Garlic Pepper Wing Shake This is another one that I love to put on chicken and then grill/smoke it. Let’s take a second here to actually talk about the label Wing Shake, these seasonings get pigeon holed unfairly because of that label. As you can see they are extremely versatile and can be used for many different purposes! Ultimate Steak and Roast Rub I have not put anything else on a steak for years, this takes an average steak and makes it great! To me it tastes like a better version of Montreal seasoning and the ingredients are similar but this is better. You can also make delicious Asparagus with this and some lemon and butter. Coat the Asparagus in olive oil, then lightly sprinkle this on and put in the oven or grill until it is as done as you like (I like them still to be pretty firm so I usually do them for about 6 minutes) melt a bit of butter over it if you choose and then squeeze some fresh lemon juice onto it! Mexicali Taco Seasoning. I was leaving work one day and knew I needed taco seasoning so I took this on someones recommendation and am glad I did. It has a lot more flavor than the normal store bought package and just as importantly I didn’t have to make a stop on the way home! Sweet N’ Sassy Garlic Seasoning I started putting this on cucumbers before I found the Salt & Vinegar, now I use it on Chicken from time to time and sweet potatoes. This is also part of what Austin recently used recently to beat me in our national BBQ competition…it lost some points for that! Better Burger Seasoning. When I am having large groups over I will usually make up a bunch of burgers. I split them between this and the Roasted Garlic & Onion. Both get rave reviews and we find ourselves hosting the majority of BBQs amongst our friends, so use with caution you might find your house the new gathering place! Captains Bay Seasoning Good with fish, amazing with shellfish like crab and scallops, similar to Old Bay Seasoning. I also like to put it on white rice with Parmesan cheese from time to time. Sriracha Ginger Beer. This is one of Excalibur’s new Spirit Seasonings and isn’t on the web just yet but it will be shortly! It takes the Ginger Beer Craze from Moscow Mules and adds a Sriracha taste to it! Very very good on Chicken this is my favorite out of all the new Spirit seasonings. Butter Garlic Rub A little of this goes a long way! One of the few times the saying less is more really applies in my mind. Just a light sprinkle on chicken before or after the grill makes for a delicious piece of chicken! Also great on roasted potatoes, all sorts of veggies and fish! Cajun Seasoning This is great on fish, especially catfish or talapia but I use it mostly to make a hot sweet potato french fry! Added bonus this has just enough of a kick that it’s too hot for my wife so I get all the fries! Prime Rib Rub You can use it on prime rib sure but for prime rib I’d normally just use Pa’s Soluble Black Bull. Prime Rib Rub is really great to use when you are cooking up some ground beef in a pan, it makes an amazing Au Jus sauce! Get some good bread to sop it up! Rosemary Basil & Thyme seasoning Great on roasted potatoes and other veggies, also its part of my Cranberry Glaze that I used in my competition with Austin. Kosmo’s Killer Bee Spicy Rub I started using this just on chicken and pork as a rub but now I use it mostly on … Popcorn! Yeah I know it sounds crazy but it adds a nice sweet and spicy taste to it, you have to put some butter on your popcorn for it to stick but just enough for that and it’s a great treat and if you don’t like that it is still an awesome rub for chicken or pork. Thai Basil Panko Breading and Farmer Market Panko Breading Both are great on chicken, I don’t like frying them so I do them on the grill and still end up with a tasty and more healthy breaded chicken! And now for the most hotly disputed thing in my Pantry…Wild Game Seasoning! You are either going to love this or hate it! The best use I have found for this is to cut Granny Smith Apples (specifically the granny smith for the tartness) up into slices and sprinkle this on them as I am eating it! You can not leave it on there too long or it will start to break the apple down and make it watery. I love the combination of the Sweetness from the Wild Game and the Tart from the apple but I have been called all sorts of crazy for this one! I have not found anyone who likes this anywhere near as much as I do! A more popular choice here would be Cinnamon Toast Seasoning! So those are the main seasonings I use, give some of them a try and let me know what you think!     Meatgistics: National BBQ Day Competition See who wins in this head to head battle of Austin and Jon! We both took a pork loin, followed our own recipe and let the employees at Walton's decide the winner! Watch the video, read the guide, and then post your questions or comments below. National BBQ Day Celebration To celebrate this day we decided to each cook a pork loin with our own recipes and then let the employees here rate them on a scale from 1 to 3 and then give an additional point for whichever one the preferred. We did not tell the employees who was doing what so no one could play favorites! For Austin’s pork loin he decided to do an over the top stuffed pork loin! He stuffed his with an Artichoke and Jalapeno cream cheese, Garlic Romano Wing Shake and then he added bacon to that as well. He marinated it for only a few minutes in Butter Flavored Seasoning & Marinade and finished it off by rubbing the outside with Sweet and Sassy Garlic Seasoning. I went a little simpler with mine, using just an injection and a glaze. I injected it with a soluble Honey Chipotle Seasoning and the glaze was a Cranberry Balsamic Rosemary sauce I made with store bought Cranberry Sauce, balsamic vinegar and then I used our Rosemary Basil & Thyme shaker to finish it off. We both cooked it at the same time on the same grill and to roughly the same temperatures. Both of the finished products were delicious and the employees really were torn on which was their favorite as you can see with how close the final vote was. The Longopac Waste system is a revolutionary device in the world of sanitation and disposal. It completely changes the way that commercial processors and home users treat waste in their processing areas! What do you do if you are at the end of a processing day and your garbage bag is a quarter full of trimmings, guts or other waste material? With a traditional system you have no choice but to take out the entire bag and throw it out. That is an efficient use of materials and waste of money! What about when you throw something out and it has an unpleasant odor? Again, with traditional waste systems you would either have to deal with the smell all day or take the entire bag to the dumpster, costing you time and money. Old garbage bags systems take up a lot of space, are cumbersome to work with and the bags are more expensive and will often tear. Longopac has solved this by creating a system that allows you to customize the length of your bags, is on sturdy wheels for easy movement and takes up far less space than a traditional waste container. The holder is an open sided system with a ring at the top to create a sturdy opening for the bags to hang on. The “bags” come in cassettes, really it is a long tube open at both ends and tightly folded to a height of 6 inches. The cassette is then placed around the top of the holder and the open end is slid over and through the opening, the open portion of the bag that is hanging down is then zip tied closed and waste material is placed in the bag through the opening of the holder. Once the desired amount of material is in the bag, and remember it can be as long or as short as you want it to be, you then zip tie the top of it closed and then place another zip tie two inches above that. The second zip tie now becomes the bottom the next bag, to separate the bag simply cut between the zip ties with the provided scissors, which are conveniently attached to the stand so they cannot be lost, which as you commercial processors know, can happen all too often! The previous bag is now totally sealed and no waste material can spill out of it. Each order of cassettes also comes with replacement zip ties. We carry two sizes of Longopacs, the Mini and the Maxi. The mini is 33.5” from the base to the top, has an overall width of 15” and an opening of 11.5”, the bags for the mini are 213 feet long and have a diameter of 14”. This is an ideal size for smaller processing plants and home use. The Maxi has a height 41.5”, an overall width of 22.5” and the diameter of the opening is 16.5” making it a good size for large commercial processing businesses. The bags for Maxi are 360 feet long, have a width of 22.5" and come in black and clear. Three seasonings recently discontinued by Morton that were popular for a variety of meat products and each of these new seasonings have been custom blended by Excalibur to be a custom match to the now discontinued Morton seasonings. The sausage and meatloaf seasoning can be easily measured out for 1 lb increments of sausage using 1 level tablespoon of seasoning per pound of meat for a simple fresh pork sausage. They used to be only available in cases of 4,000, but now, with 100 count packages available, whether you are a commercial or home meat processor, it is affordable and feasible to use oxygen absorbers in things like packages of jerky, just like you find in the name brand bag of jerky from your local convenience store. The 100cc Oxygen Absorbers are perfect for use in up to a 1 quart container or 8x12 bag, or for gallon size containers, simply use 3 oxygen absorbers per container. How they works is that they lower the oxygen levels in an air tight package to less than 0.01%, which in turn helps maintain freshness and extends the shelf-life of products by preventing mold, mildew, and bacteria from growing. If you do not use a full package at one time though, make sure you immediately re-vacuum seal the original package, and use whatever oxygen absorbers you take out within a 30 minute time frame. The oxygen absorbers are FDA approved for use with food and food related items, but they can also be used for packing non-food items as well, or in any packages and containers which would benefit from the removal of oxygen. Two of the more common uses would be for use in packages of jerky and meat snacks, or in packages of dehydrated fruits and veggies. How does Excalibur Seasoning handle documentation? A lot of their documentation is handled in their SQF Level 3 certification and compliance. SQF is all about documentation. Every input and output for a seasoning it logged, assigned a lot number, and is tracked. What is the blue label that is on some of the Excalibur Seasoning packages? It simply identifies that there is an allergen in that product. The blue labels are Excalibur’s way of specifically being proactive towards the possibility of a recall. Most recalls by a meat or food processor occur due to the failure to list an allergen on the label, or an allergen gets introduced where it shouldn’t. USDA inspectors love the blue label because allergens are required to be separated in a meat processing facility from the rest of the raw materials and inputs. The blue label allows the customer to identify allergens quickly and USDA inspectors to quickly visualize if a processor is adhering to proper storage of seasonings and allergens. It is a food safety initiative, that helps make things easier for a processor to separate allergens from the rest of their raw materials.

Does Excalibur Seasoning have an R&D department? They do have an R&D department, which is one thing very unique about them in the industry and what they offer with their R&D lab, plus the people and staff that they’ve assembled to run their “Excalibur Innovation Center”. According to John Brewer, Excalibur Seasoning has one of the best research chefs in the industry, Marlo Mastalerz, and what she is able to develop, the timeline, and turn around for products is incredible in both duplication and new product development. Can Excalibur duplicate a seasoning blend from another seasoning company, and how does that work? If a customer is currently buying from another seasoning company, Excalibur Seasoning can match and duplicate that product in the Excalibur Innovation Center. In many circumstances, they can also clean the label up, extend the shelf life and enhance the product’s appearance on the shelf. How are new flavor profiles created? New flavor profiles can be created solely by the Excalibur Innovation Center, or it could come from a saleman from Excalibur or Walton’s, or it may come from a customer as a new request for something new, different, or a similar rendition of something existing. How much do you have to buy to be able to order custom blended seasoning? For dry seasonings, Excalibur Seasoning has what might be some of the lowest minimums in the industry. Only 100 pounds are required for a custom blend. Many competitors have raised their minimums to 1,000 pounds or more, but Excalibur remains unique by offering a very small minimum of only 100 pounds. Those low minimums allow small and independent processors and others to be unique themselves in their own market place without having to adhere to minimums that are simply unattainable at the 1,000 pound level. What about minimums for liquid sauce or marinade? Excalibur also has extremely low minimums for liquids. At only 150 gallons, their minimum is pretty much unheard of in the industry. One of Excalibur Seasoning’s strong points is their ability to produce smaller volumes of seasonings and sauces that others in the industry simply cannot or do not offer. What is needed to duplicate a seasoning blend and make a new custom blend? It is extensive, but we make it as easy and painless for a customer as possible. Some of the steps and things needed are: Product development form questionaire and ingredient statement Formulation of seasoning, if possible Physical sample to to review aesthetics What is the application, what is it going on, and how much is typically used per batch? Does the customer want to exact and identical ingredient statement, or can Excalibur help clean up the label, and make sure the label is following marketplace guidelines. Excalibur will begin formulation, and prepare the product as the customer would to compare real-world performance of that seasoning Excalibur sends the new seasoning formulation back to the customer for approval, or for necessary tweaking, editing, and a second re-formulation. Is there a cost for duplicating or matching a seasoning and making a custom blend? For dry seasoning blends, there is no cost and it is done free of charge. For liquids and sauces, it is a lot more complicated, so a $500 deposit is required before development. Then, that is refunded back to the customer after the product is approved and the customer has bought a specified amount once they are a customer. This helps cover some basic costs, but is not meant to be a profit center for Excalibur. Why would a home processor, independent meat processor, large food processor, grocery store, restaurant, etc. trust Excalibur to blend their seasonings? Consistency. Simply put, Excalibur is going to produce a high quality, safe product, with a high level of integrity and consistency that is hard to beat in any other method. Some customers are afraid of letting go of their proprietary blend that has been in their company or family for generations, but Excalibur has a high level of integrity and guarantees that the customer’s formula is not going to go anywhere or be shared with anyone else. Only that customer has access to their custom blend. Why are Excalibur’s products so consistent? Going back to Excalibur’s SQF Level 3 certification, they are going to produce a high quality and safe product, that is consistent and always documented. Batches and lots are always compared visually and by taste to the previous batch and lot. Every ingredient is tracked on the input and output, and they guarantee consistency, repeat-ability, and trace-ability. Do minimums for custom blends also apply to private label seasonings? Many private label seasoning are simply an existing Excalibur Seasoning blend. When that is the case, there is no minimum. If a private label seasoning is also a custom blend, then there still is the 100 pound minimum for dry blends or 150 gallon minimum for liquids and sauces.

When you call Excalibur, or Walton’s, you get an actual person on the phone, either a customer service representative or a salesman and not a machine or recording. They are also knowledgeable in the entire product catalog across the entire gamut of products. Excalibur and Walton’s both deal with customers ranging from the small home processor up to some of the largest meat processors and grocery stores in the industry. We provide sales and service for our customers, provide programs and training and not just a single product or sale. When a customer needs us, we are there to provide help and support, and not simply a one-time sale. The level of customer service is second to none. What sets Excalibur Seasoning apart from various competitors? Development capabilities and R&D are huge identifiers that separate Excalibur from other companies. They are very on trend as to what’s in the market place, what is selling in the regional and global aspects of the market. Relating to everything from sauces to seasoning blends to marinades, there are so many different categories that Excalibur carries a high level of expertise in. How does Excalibur come up with so many unique flavor profiles? They have a separate R&D lab, or as they call it, the Excalibur Innovation Center, that is constantly reviewing what’s popular regionally and globally. They don’t rule anything out on the development side, as either too wild, or too hard to develop. Even things like Chocolate Chili Flavored Bratwursts and Gummy Bear Bratwursts are two recent additions to the Excalibur product catalog that were created by the Excalibur Innovation Center.
