    @Jonathon yes sir, I don’t think i would attempt without putting my own mold on these. This weekend I weigh these bad boys and see how they came out.     @Jonathon We’ll that was the first thing that came to mind the first batch i ever made. had a cold beer in hand and was sampling one and closed my eyes to savor the moment and the smoke aroma smelled just like i had a lit cigar in my mouth thus the term [meat cigars]

    @Jonathon 4 lbs pork with bear meat and 5 lbs. with the goose… First time making bear, so I would go 3lbs. Next time.

    @jdh52mail That is awesome on two levels. Frist, really glad the hams worked out and you have another option for your meat. Secondly, and maybe even more importantly is that you can tell people about this and hopefully increase peoples interest in hunting wild hogs, it is a real problem and I hear a lot of people coomplain that they dont taste that good, so if you can show them you can make hams out of them maybe more hunters will be convinced that they are worth going after. On a somewhat related note I was talking to an exterminator up here in Wichita KS and he told me we are starting to see all sorts of new wild life that previously was not up here. Armadillos are now pretty much all over which carry leprosy or something like that and now apparently there are black widows all over the place here! He told me to never pick up a baited rodent trap (the black molded kind) because the majority of them have a black widow living inside of them. I’m not arachnophobic but forget that nonsense! Also, I am 75% sure I have a copperhead living on my pond now. It is one snack that only swims on the top and i’ve seen it up close and it sure looked like a copper head to me. Okay, I’m done rambling!

    @calldoctoday And the worst one (at least in my mind) is the hangar steak, here is a description from Jerky 103: Best Cuts for jerky Hangar Steaks - Hangar Steaks were very inexpensive until somewhat recently, Americans became aware of this tasty cut and started looking for it in more than just restaurants. The problem with that is unlike other cuts like filets and rounds there is only 1 hangar steak per animal and it is fairly small. So it can be difficult to keep enough in inventory, especially since it is a very tender steak, for this reason, the price has increased year over year and what was once a great choice for jerky is starting to price itself out of the game, which is a shame as this is an excellent cut for jerky.

    @gerry-johnson gerry Texture is good but it doesn’t cover how the fat melts and coats the mouth @Joe-Hell I like Palate Apeal much better, in my mind this is the leader right now!

    @deplorablenc1 I am fortunate that I am virtually immune to bee stings…generally speaking of course. Any swelling or irritation dissipates in minutes. Mosquito bites are far more annoying.
