    YooperDog yes that is what I’m taking about. I don’t have an Smoked Meat Stabilizer so I guess I will let it set until tomorrow morning. It should be alright if it set for about 16 to 18 hours?

    Getting ready to do hot links for the first time and the package says to add Sure Cure. I am thinking it should be like a cure sausage and add Binder and Encapsulated Citric Acid to it so I can smoke it today. I’m I thinking right?

    Okay Thanks. If I don’t wanted to smoke them right away should I leave the cure out? Or is there a way I can make them, Vacuum pack , freeze and smoke them at a later date?

    They are 5 lbs batches . They was made with pork, following the package directions add cure and then I was just going to freeze them and smoke them later.

    I made Hot Links and Jalapeno & Chedder Sausage on Sunday. Got busy a forgot I had them in the Fridge. When I got them out today to to put them in the freezer so I can Vacuum Pack. The tops was Brown and the bottoms was red. Are they still good?

    Still New at this and they told me when I pick up the seasoning to use Super Bind. But I forgot to ask when I use it? My question is I am going to make Mild Italian , Jalapeno and Cheddar sausage, Hot links and Pepperoni today. I ready to grind my meat and start mixing up. Do I use it in all of these? Thanks

    badfire2625 I have 3 Jambo Pits. I think they are one of the best offset pit out there. The waiting time varies depending on what pit you want. Fans of Jambo on Facebook has some used pits for sale. I always got a Deep South Gravity Feed pit.
