Salami recipe vs Summer sausage recipe?It looks to me like the Salami recipe is different from the Summer sausage in that for Salami you don’t use Sure Gel as a binder but use Carrot fiber and Cold phosphate instead. Can anyone confirm that? We will be using a Venison Pork combo. First time making both so any other advice appreciated. Thanks.
