After some googling… It would appear that a B Unit is seasoning for 25# and a C Unit is seasoning for 12.5#. If the letter isn’t specified, it looks like it’s assumed to be a B Unit for 25# of meat.

I was digging through my most recent order and I started wondering what the word unit indicates for some of the products. As in I have “Salami Unit (No MSG)” and “Wisconsin Summer Unit”.

Is it that it has the CSS and dextrose already in it?
