Deer snack sticks to wet

Twillams the only air or fan is the aquarium pump that pushes air through my smoke generator. The PID controller keeps the temp within 1 degrees to all times! (It’s amazing!) I have probed the entire cooking chamber and only found a 4 degree difference in it.(which I’m still having a hard time believing!) also as my sticks cooked I had 5 temp probes at different places all over and they all stayed within 1 degree of each other in fact when I pulled them 4 of the probes were at 160 and the 5th was 161. I couldn’t believe it. But I think you may be right about adding water to soon but I may try the other suggestion and get a sensor for the humidity and I definitely need to mix longer and use sure gel next time! Thanks to everyone that responded!

Fred Bear man that is some nice accuracy Fred! I’m researching to build a smoker like yours, what kind of PID did you use, and where can I get one? I’d love to see any notes on your build. I’m really impressed with so many of the devices folks have made, and yours sounds great.

Yes that is the correct web site. Mine is the WS-2000F-SMD. It’s really impressive and their customer service is great. You can program it to do your temperature graduations all on its own and also it will shut off when your meat is cooked to the temperature that you want or you can program it to keep it warm it’s really an amazing device

Also I’m planning on trying to make a short YouTube video on everything I did because I haven’t seen a good one on how to go about making A smoker from a commercial refrigerator I mean as far as removing the foam and taking it apart and such. It might take me a while but I will definitely put it back on here so if you guys want to watch it you can.

Dave in AZ I think you’re right on what might have happened. I like a dryer meat stick, and after my cooking, I transfer to my charcuterie fridge, 85% humidity at 56 degrees for six days or so.
