I added Sure Cure to my meat to make sausage and it turned my meat a whitish color and my meat is no longer pink. Does anyone know why this happened and how to prevent it?

sarabelieves38 no it will come back a nice deep red, it’s just the cure working at the initial mix that will turn it brown. Never seen it turn white

Ok now looking at it again it does look more like a light brown. After overnight refrigeration should it still stay brown (before being cooked)?

sarabelieves38 yes but hopefully you stuffed it right after mixing or it will be super stiff and possibly damage your stuffer
