    I made two different 5 lb batches of snak stix today–one sweet chipolte and the other summer sausage unit 107. I added binder to the chipolte but missed it on the summer sausage. What difference will this make? I’m guessing the final texture may be different. Anyone else ever do this? Thanks! My new 11 lb sausage stuffer worked great!!!

      When using the Willys snack stick seasoning, I have never added a binder and have never had any problems. They turn out great.

            TCMEISLING did you notice a difference in tackiness between both batches when protein extraction was achieved? I never used it and all turned out great. I started using a binder just this year, and it does help however not night and day difference. You should be fine

              I tried both batches this morning. I really can’t tell the difference. Maybe the Sweet Chipolte is a bit smoother, but the flavor is great. Thanks so much for your help!!!Therese

                I suspect that many of the seasoning blends we purchase already have ingredients in them that work as binders.
                It would be great to hear from Excalibur or other suppliers who could comment on if this is the case.
