Congrats on finding a source for pork fat. Condolences that it’s selling for double the price of pork butt.

Pork fat has turned into a rare commodity for home processors who do not raise their own hogs or know someone who does.

It wasn’t that many years ago that they were nearly giving it away.

I would try and find area processors that butcher on a small scale. Not only will they me more likely to deal directly with small scale buyers, but they also may be able to connect you with small scale livestock producers who raise a couple hogs for personal consumption and would be willing to sell you excess pork or beef trimmings or pork fat.

A farmers co-op or feed and supply store would also be a possible source of local small scale livestock producers and hobby farmers.

I buy bone in pork butts by the case fm Restaurant Depot. I use bone in for pulled pork and ham. Great fat cap, normally 1.5lbs. Trim it for use with beef and Bambi sausage. Don’t need the cap for brining or smoking… just a waste. For sausage i use bone out and leave the fat cap for 30-70. Just what i do… B.I here, $1.29lb by 60-80lb case, B.O $1.49. Sam’s clubs will give a 10% discount if you buy by the case, but their b.I is trimmed with almost no fat cap. Never at a loss for pork fat.
