TexLaw here’s the pictures of the eggs I put up yesterday, only thing I changed is I did add a bit of beet juice, wife thought the color was pretty.

Chef I have never seen tops like that. Where did you get them?

calldoctoday Walmart. Fairly cheap, but getting mason jar lids and tops is next to impossible, haven’t been able to get lids in a good while. Can’t can with these, but great once you open up a jar or for storage. I keep all my spices in quart and 1/2 gallon mason jars and use these lids for them as well
-
Chef Wow, that looks amazing. Is that a regular & an extra spicy? it looks like you have more peppers in there which sounds even more amazing. It doesn’t look like Beets, or at least not when I used to add them for some batches.
calldoctoday I didn’t intentionally add more of anything, most of that was onions and ginger. as far as the beets, added a very minimal amount, didn’t want to change the flavor profile.

Chef Well, they sure do look good! I thought maybe you used more pepper like spices & I really like the idea. They did not look beet like. Oh well. I wonder what the problem with getting canning lids is? I have seen in past years that they would not sell much of any canning supplies if any at one Walmart & then go down the road 10 miles or so & they had them. When I asked about it, they said they figure out what the customers that use that particular store the most like & buy & order accordingly. The ones that did not sell the canning supplies were more uptown & the ones that did we more country. I seem to think it was the Walmart in Tomball vs one out on Jackrabbit Road somewhere. The one in Tomball of course was much more country like. Granted that was at least 30 years ago.

calldoctoday Chef No canning lids to be found around here either, I’ve checked groceries stores, hardware stores, TSC, Orschelens, etc and there are no lids to ge found. You can buy new jars with lids, but that is about it.

Tex_77 Wow. I am going to have to look here now too. I have not looked, because I did not need any & had several boxes. That is amazing. I wonder what the deal with this is now. It seems like it has been one thing or the other of late.

calldoctoday The pandemic has got everyone gardening and canning.

calldoctoday Tex_77 I can’t even get new jars around here. People are afraid. I know of several people stocking up just in case the November elections don’t go the way they want. Everything from canning, baking, sourdough, gardens, and even things like chickens and bees. A sad situation that in as great of a country as the United States is, that people have to be concerned about such things.

Chef Always want to be ready for the end times.

Tex_77 If I bought more canning jars, the wife would kill me. I do can a lot, typically have 200 to 500 jars of soups, meats, pickled items, fruits, and just about anything I can put up. I have an old farmhouse that I’m restoring and I love the ‘mud room’ design these homes had. Got shelving to store all my canned goods and cookbooks. I’ve never been known to do things in limited quantity. Hell, my gumbo pot is an 80 quart pot. But during these time, finding several people of need that I’m so blessed to help bu making sure they have a good meal in front of them.
-
Tex_77 I’m always ready. As Paul said, I ready to join you, but I’ll stay here if you need me to!

Chef Well, we have always done Gardening, animal husbandry, canning, drying, chickens, rabbits, always wanted to do bees, but never got around to it. We just did it because we liked to, or at least I probably did a little bit more than Margaret. We always seemed to do a lot of things when they were not cool & then they became cool, so I suppose we were always a day late & a dollar short. Now this year of course, you can count on it, I was extremely busy in January before all this mess hit & I decided of all years to let my garden go fallow as we had a lot canned & stored anyways. There again, a day late & a dollar short. Then of course my brother in law has been raving for years that we will always bet her to survive Armageddon since we do our own & are fiercely independent. I just thought he was funny.

She won’t let me dig us a Root Cellar though! Probably would not work down here anyways.

calldoctoday I think most people in this community will do okay regardless of the situation. There is so much knowledge and experience with the people who are part of meatgistics. We’ll survive anything, even Armageddon.

No, we lived in Cypress, Tomball, & Magnolia, but I was transferred out to SE Alabama in 2002.

Chef Sounds like we may have crossed each other’s path in the middle of the night. What restaurant did you have in Spring or was that before or after my time in the neighborhood? Yes, there are a bunch of places out there in Alabama like that.

calldoctoday You were gone before my restaurant, but you may know the location, next to Theiss farmers market on Stuebner Airline, behind the HEB

Its a small world. I used to sort of have a specialty or maybe a name that I developed doing the design & maintenance on the meat processing outfits (OSWWF) in the area. I used to do the work for Alton who had been around a long time & had the plant up in, was it Spring or Huffman, I cannot remember. I think he passed & his son moved the sausage factory up to, well I cannot remember the name of that place where they had a homestead north of Houston. My brain does that these days as I had it in my mind when I started writing & then, poof. Oh, Normandy, I think he moved it up that way. They had some good stuff coming out of there that they shared with me for helping them out.
