Wanted to try something different. So I took a Willie’s snack stick and sliced it into pennies, put in a pan and cooked them up a bit. Put in some fresh eggs from our chickens and some cheese…bam!!! A great dinner omlet!20190325_192923-1209x1612.jpg 20190325_192920-1209x1612.jpg 20190325_193632-1209x1612.jpg

Yum…that’s a low carb recipe I can surely appreciate! I dig that curly slide for the eggs too!

Joe Hell we get so many eggs we have to eat them somehow. Now I make omelets out of everything!

deplorablenc1 I’ve been making batches of scrambled eggs with about 18-24 at a time and then adding cheese, peppers and sausage and/or bacon once cooled. I then weigh out 2.5 oz portions of the mix and roll into burritos using Mission low carb tortillas before wrapping in plastic wrap and freezing. They reheat well in the microwave and provide about 200 calories and 6 carbs each. They put any fast food breakfast burrito to shame!

Joe Hell that’s a great idea! We are getting between 12 and 14 eggs a day so I have got to make anything I can think of. Also get duck eggs. This meat stick omelet was pretty freaking good though.
