Chicago Hot Dog Recipe Needed.

    So I am looking for the classic vienna beef hotdog clone. I’ve read allot on ready to go seasonings and some homemade seasonings and I was wondering if anyone had something they though was closer than most. Chicago dogs are usually on the thinner side also. What size/type casings should I be looking for?

      I use 22-24mm natural sheep casings. Nothing else will give you that distinct “snap” when you bite into them. Remember to soak them in water for at least one hour before stuffing. (I soak mine overnight in the refrigerator)

                  IVERYAN the kosher beef recipe was the one I was thinking. I would need to check out my other books and see if there is something different. What in particular are you looking for, seasonings/style? I not sure of what a Chicago hotdog is different. I know the classic Vienna dog with the neon green relish, sport pepper, etc… That is the basic recipe that I use.

                      pr0wlunwoof I will check my books and see if I can find another recipe or two. It might take me 2-3 days, a bit of a hectic schedule. if I find something I will post it.

                        YooperDog Sounds good. I have other things going on as well. I am not sure when my hotdog venture will begin, but I have it in my sites.

                          pr0wlunwoof Here is was I found with a quick look through my recipe notes and books. The first three are from the Marianski’s book, Home Production of Quality Meats and Sausages and the last is from Sausage Making by Ryan Farr. I hope these help or get you heading in the right direction of what you are looking for.

                              pr0wlunwoof all the base recipes were good, but I always tinker to find what I like. I am not much of a picture taker, but they were still readable. Smacznego
