      Snake River Smokers very nice. Mine will be very similar to that except I will be framing mine out of wood. Sheeting the bottom 3’ with sheetmetal on the inside and siding the outside with rough sawed lumber to match the rest of my out buildings.

          Brian Schneider Not sure what you’re doing for the shelving in there but after going back and forth, we decided to use the shelf tracking and brackets from Menards or any hardware store for that matter. It worked good because you can adjust the height and add more shelves if you would want to. Then we cut the shelves out of one inch square grid steel which is split to fit each side. It was easy to get the racks out of the door when the jerky is done. Then for hanging sausage we just put a 2x4 on each side which then we set 2x2’s with hooks to hang the summer sausage off of which worked really well. IMG_20191123_140432.jpg

            Snake River Smokers I like the way you did the shelving. I will probably do the same. Thanks for sharing. I will post some pics when we get done building for sure.

              I’m not Brian, but being nosy sort will interject an answer. I have two which I bought on line (Amazon I think). I use atop my wood stove to send heat around the room. They are silent and I never worry about turning them off.

              Try Googling “heat activated fan”.

                          Something you might want to consider is that with a wood smoke house you want to keep it far enough away from other buildings incase it catches on fire it does not burn down another building.

                              Hope for you that it never does burn down, But I have a friend who had his wood smoke house catch fire and had a heck of a time saving his SMOKED chicken and getting the fire out.

                                I’m not sure how stove fans work exactly, but I think they require a substantial difference in temperature between the contact point and the ambient temperature. Meaning if you put it in a room that is a constant temperature above 120 it won’t spin. The spinning is the action of it dissipating heat which it wouldn’t be able to do at a constant ambient temperature.
