    @ryan-yoder The maple sugar will give you a subtle flavor, I add real maple flavoring in addition to the sugar to kick up the maple taste. If you add too much sugar your sausage will become really sweet and unless that is what you are trying to get as well you will probably want to add flavoring as well. I find the sugar doesn’t quite add enough flavor and ends up more like a maple brown sugar flavor rather than straight maple. How much to add also depends on how much sausage you are making and what you are using as far as seasonings, pre-packaged vs. homemade.

    Makes great breakfast sausage. I use the Holly seasoning and a little bit extra pepper flakes. maybe 2 Tbs. for a 20 lb. batch. Also makes great brats with pork fat.

    Hey Dave, I am no expert by any means but the Holly seasoning was by far better than any other seasoning i tried. The southern seasoning was also good and had a different finish to it

    Isn’t that pretty much the binder in Sure Gel? Here’s it’s ingredients: Whey Protein Powder (Reduced Lactose Whey, Sodium Caseinate, Whey), Sodium Phosphate (33.33%), Hydrolyzed Gelatin (For Flavoring).  What’s the difference between whey protein isolate, and powder od reduced lactose whey?

    @cdavis the dough is richer than your typical jelly donut and filled to the extreme. Typically when I was younger they came in prune filling. Over time they have a variety of flavors and are coating in sugar.

    I would think it would take at least a couple gallons of cream to work in a motorized #50 mixer. At the end of it, you will have some expensive butter.
