I will use it for bacon,  Canadian bacon/pork loin, maybe small butt sizes like capocolla.  Also pastrami and brisket.</p>
<p dir="auto">I would think 12in best for bacon, but then the 10 inch blurb says “The extra-large carriage and blade mean you can put big cuts like hams and even bacon on here for slicing.”   Since no spec is given for max width of cut, i.e. carriage travel, now I’m wondering if the smaller 10 inch blade gives that one a longer carriage bed and travel?</p>
<p dir="auto">Can anyone with experience on these tell me which is best for max width of meat etc?<br />

I fold mine in the shape of a U, put a rubber band on it and put it on a shelf in my freezer to  really stiffen it up.  Then I feed it through the slicer with the bottom on the U to be first to hit the blade.  The handle/gripper on the slicer held it well and nice even slices until you are almost out of bacon.</p>

They still work fine but we just wanted to up grade so we don’t have to cut some things in half in order to get full sized slices. I started out with a small 8" plastic slicer.  That was before I started doing bacon.  I quickly decided that I needed to upgrade.  The largest slicer I could get to fit on my kitchen counters was a 10" slicer.  I was not familiar with Walton’s at the time.  I hate to buy things sight unseen so I went to Cabela’s and bought one of their “Commercial” grade 10" slicers.  The carriage travel just wasn’t long enough to do whole slabs of bacon.  I had to bend the slabs and tie them to get a whole slice.  I looked at the Cabela’s 12 in slicer and the carriage travel was not much longer than the 10".  Someone on another forum told me to start looking for a used Hobart or Berkel 12" slicer.  I found a used Hobart locally for $175.00.  I made sure that it ran and the blade didn’t wobble before I bought it.  I found a place that had a blade sharpener and they did a tune up on the slicer.  This took the total cost to $500.00.  Since this slicer is to heavy for me to pickup and move around I bought a stainless steel cart with wheels.  This slicer is simply a beast when it comes to slicing bacon and it will cut up to 7/8" thick.  Just a thought.</p>

It works great and i use on a variety of meats, cheese, vegetables and fruits.  I slice my whole muscle meat roasts for jerky semi-frozen and you can hear the motor work a little harder but no problems.  If you wanted to slice traditional pork belly slabs about the maximum width of the slab you can cut is 8 inches unless you fold in half and semi freeze, to get it quite stiff and then slice it.</p>
